Afro-Asian Sticky Wings

Who doesn’t love wings??! I say this recipe serves 2 people, but if you’re like me, this is all for YOU baby!! Sweet/sticky, savory, and a little spicy - everything you need in a chicken wing and more. You’re going to need a few napkins for this one - enjoy!

Ingredients for Wing Seasoning:

*many of the “unknown/unfamiliar ingredients can be found at your local Asian grocer

Chicken Wings - Approx. 1.5lbs/6 wings/12 wingettes

5 garlic cloves

3 birds eye chili/Thai chili/Vietnamese chili*

Fresh Ginger (about the length of your pinky finger)

Fresh Cilantro (1/4 bunch or a palm full)

2tbs Cooking Oil (your choice)

1tbs Better Than

1tbs Something Sweet

1 lime (juiced)

Ingredients for Wing Sauce:

2tbs soy sauce

1tbs black soy sauce (it’s thick like molasses) *

1tsp mirin *

1tsp peanut butter

2tbs Something Sweet

1 lime (juiced)

1/2 bunch green onion/scallion (chopped)

Supplies Needed:
Cutting Board

Sharp Knife/Chef’s Knife

Tongs

Fork or Whisk

Baking Sheet

Wire Racks for Baking Sheets (optional)

2 Medium Mixing Bowls

Measuring Spoons

Blender/Food Processor

Wing Marinade

Step 1 - Preheat the oven to 400 degrees. Step 1.5 - Create the wing marinade. Place garlic cloves, bird’s eye chili, ginger, cilantro, lime juice, and oil in a blender or food processor.

Step 2 - What you’re going to do here is toss your chicken wings in Better Than and Something Sweet. Once covered with seasoning, coat the chicken wings with the marinade.

Step 2.5 - If you’d like to add extra steps to recipe, then you can allow the chicken to marinate in the fridge for 30 minutes or overnight if you want maximum flavor.

Step 3 - Spread out the wings on a baking sheet. Bake on 400 degrees for 15 min.

Step 4 - While the wings are in the oven, make the wing sauce. In a mixing bowl, add the soy sauce, black soy sauce, mirin, peanut butter, chopped scallions/green onions, Something Sweet, and lime juice to a mixing bowl. Use a whisk or fork to mix well. Set aside.

Step 5 - Flip the wings to the other side. Bake on 400 degrees for another 15 min.

Step 6 - At this point, your wings are cooked! Use your tongs and toss them in the wing sauce that you set aside.

Step 7 - Use the tongs and place the wings back on the baking sheet. Turn your oven on broil and cook until a nice char starts to develop.

Step 8 - Plate wings in a serving dish. Put extra sauce on the side to use as a dip. Garnish with extra chopped scallions/green onion and chopped fresh cilantro (trust me, you don’t want to skip this part!)

Serve with french fries, plantains, tostones, or by itself. Enjoy!!
